Oyster in shaved carpaccio of peppered beef in a lettuce cup with marinated pear with cream mustard dressing
Tian of layered wild mushroom and potato salad topped with shrimp in horseradish mayonnaise, sweet and soured marinated Norwegian salmon, finished with crisp vegetable julienne and micro shoots, tomato confit with crème fraîche and chefs sweet and sour dressing
Deep fried avocado, smoked mozzarella rolled in Parma ham and crumbed, served on a light salad with lemon, mustard and honey dressing
Smoked brinjal roll with roasted peppers, Danish feta with toasted pine kernels, served with butternut and sweet potato phyllo cigar, crumbed deep fried avocado, complimented with olive and tomato relish (V)
